- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 cup roasted red peppers, chopped
- 1 cup mozzarella cheese, shredded
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- Fresh basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the chopped roasted red peppers, mozzarella cheese, garlic powder, salt, and black pepper in a mixing bowl.
- Prepare the chicken breasts by making pockets on one side.
- Stuff each chicken breast with the pepper and cheese mixture.
- Brush the stuffed chicken with olive oil, and season with additional salt and pepper.
- Arrange the chicken breasts in a baking dish and cover with foil.
- Bake for 25-30 minutes, then uncover and bake for an additional 10 minutes.
- Garnish with freshly chopped basil before serving.
