Description

A juicy chicken breast stuffed with roasted red peppers and mozzarella cheese, baked to perfection for a delightful dinner experience.


Ingredients

  • 4 boneless, skinless chicken breasts (68 oz each)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 cup roasted red peppers, chopped
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the chopped roasted red peppers, mozzarella cheese, garlic powder, salt, and black pepper in a mixing bowl.
  3. Prepare the chicken breasts by making pockets on one side.
  4. Stuff each chicken breast with the pepper and cheese mixture.
  5. Brush the stuffed chicken with olive oil, and season with additional salt and pepper.
  6. Arrange the chicken breasts in a baking dish and cover with foil.
  7. Bake for 25-30 minutes, then uncover and bake for an additional 10 minutes.
  8. Garnish with freshly chopped basil before serving.
