- 1 cup roasted red peppers, chopped
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Cooking spray or additional olive oil for baking
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant, about 30 seconds.
- Add chopped spinach and roasted red peppers, stirring until spinach wilts, about 2-3 minutes.
- Remove from heat and stir in shredded mozzarella, salt, pepper, and Italian seasoning.
- Slice each chicken breast through the side to create a pocket.
- Stuff each pocket generously with the spinach and cheese mixture.
- Place stuffed chicken breasts in a baking dish and lightly spray with cooking spray or drizzle with olive oil.
- Bake for 25-30 minutes, ensuring juices run clear and internal temperature reaches 165°F (75°C).
- Serve with a side salad or garlic bread.
Notes
Make-ahead by stuffing chicken breasts a few hours in advance and refrigerating. For air fryer, set at 375°F for 18-20 minutes. Use a meat thermometer to check internal temperature.
