Description

Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese, sliced
  • 1/4 cup dried cherries
  • 1/4 cup walnuts, toasted and chopped
  • 1 tablespoon fresh thyme leaves

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. Slice the sweet potatoes into 1/2-inch rounds.
  3. Toss the sweet potato slices with olive oil, salt, and black pepper in a mixing bowl.
  4. Arrange the sweet potato rounds on the baking tray in a single layer. Roast for 20-25 minutes, turning halfway through.
  5. Add brie on top of each round and return to the oven for another 5-7 minutes.
  6. Finish by sprinkling dried cherries, toasted walnuts, and thyme over the sweet potatoes.
