- 1/4 cup walnuts, toasted and chopped
- 1 tablespoon fresh thyme leaves
Instructions
- Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.
- Slice the sweet potatoes into 1/2-inch rounds.
- Toss the sweet potato slices with olive oil, salt, and black pepper in a mixing bowl.
- Arrange the sweet potato rounds on the baking tray in a single layer. Roast for 20-25 minutes, turning halfway through.
- Add brie on top of each round and return to the oven for another 5-7 minutes.
- Finish by sprinkling dried cherries, toasted walnuts, and thyme over the sweet potatoes.
