A refreshing and wholesome alternative to traditional Girl Scout cookies, these Samoa Apple Slices bring together the crunch of fresh fruit with the rich flavors of almond butter, maple syrup, and a tropical hint of coconut.


Ingredients

  • 2 medium apples of choice (Honeycrisp or Fuji)
  • 1/2 cup smooth natural almond butter
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 3/4 cup unsweetened shredded coconut
  • 3 tablespoons vanilla protein powder
  • 1/2 cup non-dairy chocolate chips

Instructions

  1. Prepare your baking sheet: Line a baking sheet with parchment paper.
  2. Wash the apples: Rinse your apples under cold water.
  3. Slice the apples: Cut each apple into circular slices, about six slices per apple.
  4. Core the slices: Remove the core from each apple slice.
  5. Mix the topping: Combine almond butter, maple syrup, and vanilla extract in a mixing bowl.
  6. Combine additional ingredients: Add shredded coconut, protein powder, and salt; mix until everything binds.
  7. Load the apple slices: Spoon the mixture onto each apple slice.
  8. Chill: Place the topped apple slices in the refrigerator to firm up.
  9. Melt the chocolate: Melt the chocolate chips until glossy.
  10. Drizzle and set: Drizzle the melted chocolate over the apple slices and let cool.
