Ingredients

  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • 2 cups baby potatoes, halved
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with Italian seasoning, salt, and pepper.
  3. Sear the chicken breasts for 6-7 minutes on one side until browned, then flip and cook for another 6-7 minutes.
  4. Add the minced garlic and stir for an additional minute.
  5. Incorporate the halved baby potatoes, cover the skillet and cook for 15-20 minutes until tender.
  6. Melt the Parmesan cheese over the chicken and potatoes, then cover for another minute.
  7. Garnish with fresh parsley before serving.
