Description

A succulent beef chuck roast slow-cooked with a flavorful herb garlic rub, creating a tender and juicy meal perfect for gatherings.

Ingredients

Scale
  • 1 beef chuck roast (34 lbs)
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh rosemary, chopped
  • 1 cup beef broth
  • Salt & black pepper to taste

Instructions

  1. Prepare the Herb Rub: In a mixing bowl, combine olive oil, minced garlic, chopped parsley, chopped rosemary, salt, and black pepper. Mix thoroughly to create a paste.
  2. Rub the Roast: Generously coat the beef chuck roast with the herb mixture, ensuring even coverage.
  3. Set the Stage in the Slow Cooker: Place the herb-rubbed roast into the slow cooker and pour beef broth around the meat.
  4. Cook: Cover and set the slow cooker to LOW for 7-8 hours until fork-tender.
  5. Rest and Serve: Allow the roast to rest for 10 minutes before slicing against the grain and drizzling with pan juices.

Notes

To enhance flavor, consider prepping the roast with the herb rub the night before and refrigerating. Sear the roast in an Instant Pot for quicker cooking.
