- 2Β½ pounds boneless, skinless chicken thighs
- Β½ cup honey
- ΒΌ cup low-sodium soy sauce
- 2 tablespoons unsalted butter
- 6 garlic cloves, minced
- ΒΌ cup chicken broth
- 1 tablespoon apple cider vinegar
- 1 teaspoon onion powder
- Β½ teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- 2 tablespoons sliced green onions, for garnish
- 1 teaspoon sesame seeds, for garnish
Instructions
The hands-on time is about 10 to 15 minutes. The slow cooker handles the rest.
Arrange the chicken thighs in a single layer in the bottom of the slow cooker. A single layer helps the chicken cook evenly and absorb more sauce. If your slow cooker is small, overlap the pieces slightly and stir gently once during cooking.
In a bowl, whisk together the honey, soy sauce, chicken broth, apple cider vinegar, minced garlic, onion powder, and black pepper until combined. Keep whisking until the honey dissolves completely so the sauce is smooth and evenly flavored.
Pour the honey garlic mixture over the chicken. Cut the butter into small pieces and distribute them over the top. Small pieces melt faster and blend more easily into the sauce.
Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the chicken reaches an internal temperature of 165Β°F (74Β°C) and is tender. Slow cookers vary from brand to brand, so start checking near the lower end of the range. Avoid lifting the lid too often, since every peek lets heat escape and extends the cooking time.
Transfer the chicken to a plate. In a small bowl, whisk together the cornstarch and cold water until smooth. Stir the mixture into the sauce in the slow cooker. Cover and cook on HIGH for 10 to 15 minutes, until the sauce thickens. Return the chicken to the slow cooker and coat it in the glossy glaze. The sauce should lightly coat the back of a spoon. For a thicker glaze, stir in another teaspoon of cornstarch mixed with a little cold water.
Sprinkle with sliced green onions and sesame seeds. Serve hot over fluffy rice, creamy mashed potatoes, or steamed vegetables, with plenty of honey garlic sauce spooned over the top. π―
