For the Salisbury Steaks
- 2 lbs ground beef
- ½ cup breadcrumbs
- 1 large egg
- 1 small onion, finely minced
- 2 tablespoons milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon salt
For the Onion Gravy
- 2 large yellow onions, thinly sliced
- 8 oz mushrooms, sliced
- 2 cups beef broth
- 1 packet brown gravy mix
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- 1 tablespoon olive oil
Instructions
Hands-on time is about 25 to 30 minutes. The slow cooker handles the rest.
In a large bowl, combine the ground beef, breadcrumbs, egg, minced onion, milk, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Mix gently until combined without overworking the meat. Overmixing makes the patties dense and tough, so stop as soon as everything is evenly distributed. Using your hands is the easiest method.
Divide the mixture into 6 to 8 oval patties. Press them gently into shape so they hold together during cooking. Oval shapes are traditional and fit neatly in the slow cooker. Try to make them about ¾ inch thick so they cook evenly. Wet hands help prevent sticking.
Heat the olive oil in a large skillet over medium-high heat. Brown the patties for approximately 2 to 3 minutes per side. They do not need to cook through at this stage. Transfer them to a plate. Work in batches so you do not crowd the pan, which would steam the meat rather than brown it. Browning adds flavor and helps the patties keep their shape.
Spread the sliced onions and mushrooms across the bottom of the slow cooker. Arrange the browned beef patties on top. The onions and mushrooms form a bed that keeps the patties from sticking and flavors the gravy from below.
In a bowl, whisk together the beef broth, brown gravy mix, Worcestershire sauce, ketchup, and minced garlic until smooth. Pour the mixture evenly over the patties. Whisk thoroughly so the gravy mix does not clump.
Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the patties are cooked through and reach an internal temperature of 160°F (71°C). Ground beef must reach 160°F (71°C) to be safe, so use an instant-read thermometer and check the center of a patty. Avoid lifting the lid too often, because heat escapes and extends cooking time.
Carefully transfer the patties to a plate. Mix the cornstarch with cold water until smooth, then stir it into the gravy. Cover and cook on HIGH for another 10 to 15 minutes, until the gravy thickens. Return the patties to the slow cooker and spoon the rich onion gravy over them. The patties will be very tender, so use a wide spatula to lift them.
Serve hot with creamy mashed potatoes, buttered egg noodles, rice, or steamed green beans. Spoon plenty of mushroom and onion gravy over each patty for the ultimate comfort-food experience. 🥩
