- 1 lb Flank Steak
- 2 ears Corn
- 1 Avocado, diced
- 1 Red Bell Pepper, diced
- 1 cup Fresh Cilantro
- 1/2 cup Sour Cream or Greek Yogurt
- 2 tbsp Lime Juice
- 2 cloves Garlic, minced
- Salt & Pepper, to taste
Instructions
- Preheat your grill to medium-high heat.
- Season the flank steak with salt and pepper on both sides.
- Grill the steak for about 5-7 minutes per side to desired doneness.
- Toss the corn directly onto the grates, cooking until slightly charred.
- Blend cilantro, sour cream or yogurt, lime juice, garlic, salt, and pepper until creamy.
- Rest the steak for a few minutes before slicing against the grain.
- Layer sliced steak, grilled corn, avocado, and bell pepper in a bowl.
- Drizzle with cilantro cream sauce and serve.
