Ingredients
- Steak (ribeye or sirloin)
- Pasta (fettuccine or penne)
- Heavy cream
- Fresh baby spinach
- Olive oil
- Minced garlic
- Salt
- Pepper
- Parmesan cheese (optional)
Instructions
- Cook the pasta in salted boiling water until al dente. Reserve half a cup of pasta water before draining.
- Heat olive oil in a heavy skillet over medium-high heat.
- Season the steak with salt and pepper, then sear in the hot skillet for 4-6 minutes per side for medium-rare. Transfer to a cutting board to rest.
- Sauté minced garlic in the skillet for 30 seconds until fragrant.
- Add the fresh spinach and stir until wilted (1-2 minutes).
- Stir in the heavy cream, simmer for a few minutes until slightly thickened, adjusting with reserved pasta water as needed.
- Slice the rested steak, serve pasta topped with creamy sauce, steak, and wilted spinach. Finish with Parmesan cheese if desired.
Notes
For make-ahead, cook the steak and prepare the sauce in advance. Avoid overcooking steak and pasta for perfect texture.
