Description

A delightful combination of tender steak and creamy pasta with garlic and spinach.


Ingredients

  • Steak (ribeye or sirloin)
  • Pasta (fettuccine or penne)
  • Heavy cream
  • Fresh baby spinach
  • Olive oil
  • Minced garlic
  • Salt
  • Pepper
  • Parmesan cheese (optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve half a cup of pasta water before draining.
  2. Heat olive oil in a heavy skillet over medium-high heat.
  3. Season the steak with salt and pepper, then sear in the hot skillet for 4-6 minutes per side for medium-rare. Transfer to a cutting board to rest.
  4. Sauté minced garlic in the skillet for 30 seconds until fragrant.
  5. Add the fresh spinach and stir until wilted (1-2 minutes).
  6. Stir in the heavy cream, simmer for a few minutes until slightly thickened, adjusting with reserved pasta water as needed.
  7. Slice the rested steak, serve pasta topped with creamy sauce, steak, and wilted spinach. Finish with Parmesan cheese if desired.

Notes

For make-ahead, cook the steak and prepare the sauce in advance. Avoid overcooking steak and pasta for perfect texture.
