Ingredients

  • 2 large chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup cream cheese
  • 1/4 cup fresh herbs (such as parsley, chives, or dill)
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the cream cheese, fresh herbs, minced garlic, salt, and pepper in a mixing bowl.
  3. Cut a pocket in each chicken breast, ensuring not to slice all the way through.
  4. Stuff each chicken breast with the cream cheese mixture, packing it in carefully.
  5. Heat the olive oil and butter in a skillet over medium-high heat and sear the stuffed chicken breasts for 3-4 minutes on each side.
  6. Transfer the seared chicken to a baking dish and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for a few minutes before slicing.
