- 1 cup fresh spinach, chopped

- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the filling by mixing chopped spinach, roasted red peppers, cream cheese, mozzarella, and Parmesan in a bowl.
- Season the chicken breasts with garlic powder, onion powder, and salt.
- Create pockets in each chicken breast by slicing them open carefully.
- Stuff each pocket with the creamy spinach mixture.
- Sear the chicken in a skillet with olive oil for 3-4 minutes on each side until golden brown.
- Bake the chicken in a baking dish for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
- Let it rest for a few minutes before slicing.
