  • 1/2 cup sugar-free powdered sweetener (powdered monk fruit or erythritol)
  • 12 tbsp milk (dairy or unsweetened almond milk)
  • 1 tsp vanilla extract
  • 16 oz sugar-free whipped topping, thawed
  • 4 bananas, sliced
  • 1 (15 oz) can crushed pineapple, drained very well
  • 1 pint strawberries, sliced
  • 1/2 cup healthy dark chocolate syrup (sugar-free) or sugar-free chocolate sauce
  • 1 cup chopped pecans, walnuts, or peanuts (optional)
  • Maraschino cherries (optional, for garnish)

Instructions

  1. Make the crust: In a mixing bowl, combine graham cracker crumbs, melted butter, sugar-free sweetener, and vanilla extract until evenly moistened. Press this mixture firmly into your 9Ă—13-inch pan. Refrigerate the crust for 30 minutes to help it set while you prepare the filling.
  2. Make the filling: Beat the softened cream cheese with a hand mixer until it reaches a smooth and creamy consistency. Gradually add the sugar-free powdered sweetener, 1-2 tablespoons of milk, and 1 teaspoon of vanilla extract, mixing until the mixture becomes light and fluffy. Gently fold in the thawed whipped topping until fully integrated and ultra-fluffy.
  3. Assemble the dessert: Once your crust is firm, spread the cream cheese filling evenly over the chilled crust, using a spatula for smoothness. Layer the sliced bananas generously over the filling, followed by the well-drained crushed pineapple. Then, arrange the sliced strawberries atop the pineapple.
  4. Add the final whipped layer: Take the remaining whipped topping and gently spread it over the fruit layer, smoothing it out for an enticing presentation.
  5. Chill & serve: Cover the dessert tightly with plastic wrap and refrigerate for at least 4 hours—overnight is ideal for the flavors to meld beautifully. Just before serving, drizzle with sugar-free chocolate syrup.
