Description

A refreshing and luscious dessert that balances the tartness of lemon with creamy filling, all nestled in a graham cracker crust and topped with strawberries.


Ingredients

  • 1 1/2 cups graham cracker crumbs (sugar-free)
  • 5 tbsp butter, melted
  • 2 tbsp granulated sugar-free sweetener (like allulose or monk fruit)
  • Optional: 1/2 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1 box (3.4 oz) sugar-free instant lemon pudding mix
  • 1 cup cold milk (dairy or unsweetened almond milk)
  • 1 tsp vanilla extract
  • 8 oz sugar-free whipped topping, thawed (or 2 cups homemade whipped cream)
  • 23 cups fresh strawberries, sliced (pat dry)

Instructions

  1. Make the crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sweetener. Mix until evenly moist. Press the mixture firmly into an 8×8-inch or 9-inch pie dish, forming an even layer.
  2. Make the filling: Beat the softened cream cheese until smooth and creamy. Gradually add the pudding mix, cold milk, and vanilla. Continue beating until the mixture thickens and becomes fluffy. Gently fold in the whipped topping until everything is light and airy.
  3. Assemble: Spread half of the luscious filling over the chilled crust. Layer with sliced strawberries, allowing their sweetness to mingle with the creamy goodness. Spread the rest of the filling on top, adding any extra strawberries for a pop of color and flavor on the very top.
  4. Chill & serve: Cover the dish and refrigerate for at least 240 minutes (4 hours), though overnight chilling allows the flavors to meld beautifully. Once ready, slice into squares and serve each piece chilled.
