- 1 1/2 cups heavy whipping cream, cold
- 1/2 cup powdered monk fruit sweetener
- 1 pack sugar-free orange gelatin, dry
- 1 tsp vanilla extract
- 1 tbsp fresh orange zest
- 1 cup fresh strawberries, hulled and diced small
- 1/2 cup fresh raspberries
- 1/2 cup fresh blackberries
- 1 kiwi, peeled and diced small
- 1/2 cup unsweetened shredded coconut, toasted
- 1/4 cup pecans, roughly chopped and toasted
- 1/4 cup sugar-free white chocolate chips (optional)
- Fresh orange zest curls (for garnish)
- Extra toasted coconut (for garnish)
- Fresh mint leaves (for garnish)
Instructions
- Beat the cream cheese until smooth and fluffy, about 3 minutes.
- Add the powdered monk fruit sweetener, vanilla extract, and orange zest, and beat until combined.
- Sprinkle the dry gelatin powder over the mixture and blend until smooth.
- Whip the heavy cream in a separate bowl until stiff peaks form.
- Fold the whipped cream into the orange cream mixture in two additions.
- Toast the shredded coconut in a skillet over medium heat until golden brown.
- Fold in the fresh strawberries, raspberries, blackberries, and kiwi.
- Incorporate the toasted coconut, chopped pecans, and optional white chocolate chips.
- Transfer to a serving bowl, garnish, and refrigerate for at least one hour before serving.
