Description

A refreshing and creamy sugar-free dessert featuring vibrant oranges and a medley of fresh fruits.


Ingredients

  • 8 oz cream cheese, softened
  • 1 1/2 cups heavy whipping cream, cold
  • 1/2 cup powdered monk fruit sweetener
  • 1 pack sugar-free orange gelatin, dry
  • 1 tsp vanilla extract
  • 1 tbsp fresh orange zest
  • 1 cup fresh strawberries, hulled and diced small
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • 1 kiwi, peeled and diced small
  • 1/2 cup unsweetened shredded coconut, toasted
  • 1/4 cup pecans, roughly chopped and toasted
  • 1/4 cup sugar-free white chocolate chips (optional)
  • Fresh orange zest curls (for garnish)
  • Extra toasted coconut (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Beat the cream cheese until smooth and fluffy, about 3 minutes.
  2. Add the powdered monk fruit sweetener, vanilla extract, and orange zest, and beat until combined.
  3. Sprinkle the dry gelatin powder over the mixture and blend until smooth.
  4. Whip the heavy cream in a separate bowl until stiff peaks form.
  5. Fold the whipped cream into the orange cream mixture in two additions.
  6. Toast the shredded coconut in a skillet over medium heat until golden brown.
  7. Fold in the fresh strawberries, raspberries, blackberries, and kiwi.
  8. Incorporate the toasted coconut, chopped pecans, and optional white chocolate chips.
  9. Transfer to a serving bowl, garnish, and refrigerate for at least one hour before serving.

Notes

For best results, consume the salad the day it’s made. You can customize the fruit based on personal preference or seasonal availability.
