Description

A vibrant and flavorful dressing blending ripe mango sweetness with zesty lime and a kick of chili powder, perfect for salads and marinades.


Ingredients

  • 1 ripe mango, peeled and pitted
  • 2 tablespoons honey or agave syrup
  • 2 tablespoons lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Prep the ingredients: Start by peeling and pitting the ripe mango. Cut it into smaller pieces for easier blending.
  2. Combine in blender: In your blender, add the mango chunks, honey or agave syrup, lime juice, apple cider vinegar, Dijon mustard, chili powder, salt, and pepper.
  3. Blend until smooth: Blend on high speed until the mixture is smooth and creamy.
  4. Emulsify with olive oil: With the blender running, slowly drizzle in the olive oil and continue blending.
  5. Taste and adjust seasoning: Stop the blender and taste your creation, adjusting as needed.
  6. Serve and enjoy: Transfer the dressing to a serving container and drizzle it over your favorite salad or use it for dipping.

Notes

For a thicker dressing, use less olive oil. Store in an airtight container for up to a week.
