Description
Crispy on the outside and soft on the inside, these Sweet Potato and Red Lentil Patties are bursting with flavor and perfect for any meal.
Ingredients

- 2 medium sweet potatoes
- 1 cup red lentils
- 1/2 cup breadcrumbs
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt to taste
- Pepper to taste
- Oil for frying
- 1 avocado
- 1/4 cup fresh cilantro
- 1 tablespoon lime juice
Instructions
- Peel and dice the sweet potatoes into small cubes. Steam them until tender, about 15 minutes.
- Cook the red lentils according to package instructions until they’re soft, about 15-20 minutes.
- Mash the steamed sweet potatoes until smooth in a large mixing bowl. Fold in the cooked lentils, breadcrumbs, cumin, paprika, salt, and pepper. Mix until well incorporated.
- Shape the mixture into patties, roughly the size of your palm, ensuring they hold together well. Aim for about 10-12 patties.
- Heat oil in a non-stick skillet over medium heat. Fry the patties for 3-4 minutes on each side or until golden brown and crispy.
- Blend the avocado, fresh cilantro, lime juice, and a pinch of salt until smooth and creamy for the avocado cilantro sauce.
- Serve the patties hot, alongside the creamy avocado sauce for dipping.
Notes
These patties can be prepared a day in advance. Cook them from frozen for a quick meal.
