Description

Crispy on the outside and soft on the inside, these Sweet Potato and Red Lentil Patties are bursting with flavor and perfect for any meal.


Ingredients

Scale
  • 2 medium sweet potatoes
  • 1 cup red lentils
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • Oil for frying
  • 1 avocado
  • 1/4 cup fresh cilantro
  • 1 tablespoon lime juice

Instructions

  1. Peel and dice the sweet potatoes into small cubes. Steam them until tender, about 15 minutes.
  2. Cook the red lentils according to package instructions until they’re soft, about 15-20 minutes.
  3. Mash the steamed sweet potatoes until smooth in a large mixing bowl. Fold in the cooked lentils, breadcrumbs, cumin, paprika, salt, and pepper. Mix until well incorporated.
  4. Shape the mixture into patties, roughly the size of your palm, ensuring they hold together well. Aim for about 10-12 patties.
  5. Heat oil in a non-stick skillet over medium heat. Fry the patties for 3-4 minutes on each side or until golden brown and crispy.
  6. Blend the avocado, fresh cilantro, lime juice, and a pinch of salt until smooth and creamy for the avocado cilantro sauce.
  7. Serve the patties hot, alongside the creamy avocado sauce for dipping.

Notes

These patties can be prepared a day in advance. Cook them from frozen for a quick meal.
