Description

A comforting and vibrant dish of roasted sweet potatoes filled with black beans, avocado, and topped with a fried egg.


Ingredients

  • 4 sweet potatoes
  • 4 eggs
  • 1 cup black beans
  • 1 avocado (diced)
  • ½ cup cherry tomatoes (halved)
  • ¼ cup green onions (sliced)
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake the sweet potatoes for 45–60 minutes until tender.
  3. Fry the eggs to your liking in a lightly oiled skillet.
  4. Prepare the baked potatoes by cutting them in half and scooping out a little of the flesh.
  5. Stuff the potatoes with a mixture of black beans, avocado, tomatoes, cumin, salt, and pepper.
  6. Return the stuffed potatoes to the oven for an additional 5–10 minutes.
  7. Garnish with green onions and cilantro before serving.

Notes
