- 4 sweet potatoes
- 4 eggs
- 1 cup black beans
- 1 avocado (diced)
- ½ cup cherry tomatoes (halved)
- ¼ cup green onions (sliced)
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Bake the sweet potatoes for 45–60 minutes until tender.
- Fry the eggs to your liking in a lightly oiled skillet.
- Prepare the baked potatoes by cutting them in half and scooping out a little of the flesh.
- Stuff the potatoes with a mixture of black beans, avocado, tomatoes, cumin, salt, and pepper.
- Return the stuffed potatoes to the oven for an additional 5–10 minutes.
- Garnish with green onions and cilantro before serving.
