Description

Deliciously crispy sweet potato fritters paired with creamy avocado and a kick of spicy honey, perfect for any occasion.


Ingredients

  • 3 cups sweet potatoes, peeled and coarsely grated
  • 2 large eggs, lightly beaten
  • 1/4 cup all-purpose flour (or chickpea flour for gluten-free)
  • 1 small shallot or 3 scallions, finely minced
  • Avocado cream (1 ripe avocado, lime juice, a pinch of salt)
  • Spicy honey (honey mixed with chili flakes)

Instructions

  1. Combine the grated sweet potatoes, beaten eggs, flour, and minced shallot or scallions in a large bowl until a thick batter forms.
  2. Heat oil in a frying pan over medium heat until shimmering.
  3. Drop spoonfuls of the fritter batter into the hot oil, flattening each mound slightly.
  4. Cook for 4-5 minutes on each side until golden brown and crispy.
  5. Mash the ripe avocado in a small bowl and mix in lime juice and salt to taste for the avocado cream.
  6. Combine honey with chili flakes for the spicy honey.
  7. Serve warm, topped with avocado cream and a drizzle of spicy honey.

Notes

Fritters can be made ahead and stored in the refrigerator; avocado cream is best served fresh. Consider air frying or baking for a healthier version.
