- 3 cups sweet potatoes, peeled and coarsely grated
- 2 large eggs, lightly beaten
- 1/4 cup all-purpose flour (or chickpea flour for gluten-free)
- 1 small shallot or 3 scallions, finely minced
- Avocado cream (1 ripe avocado, lime juice, a pinch of salt)
- Spicy honey (honey mixed with chili flakes)
Instructions
- Combine the grated sweet potatoes, beaten eggs, flour, and minced shallot or scallions in a large bowl until a thick batter forms.
- Heat oil in a frying pan over medium heat until shimmering.
- Drop spoonfuls of the fritter batter into the hot oil, flattening each mound slightly.
- Cook for 4-5 minutes on each side until golden brown and crispy.
- Mash the ripe avocado in a small bowl and mix in lime juice and salt to taste for the avocado cream.
- Combine honey with chili flakes for the spicy honey.
- Serve warm, topped with avocado cream and a drizzle of spicy honey.
Notes
Fritters can be made ahead and stored in the refrigerator; avocado cream is best served fresh. Consider air frying or baking for a healthier version.
