Description

Transform humble ingredients into delightful sweet potato and lentil patties, packed with flavor and nutrition.


Ingredients

Scale
  • 2 medium sweet potatoes
  • 1 cup red lentils
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt and pepper, to taste
  • Oil for frying

Instructions

  1. Boil the sweet potatoes in a large pot of water until fork-tender, about 15–20 minutes. Drain and mash until smooth.
  2. Prepare the lentils by cooking them in a separate pot with water over medium heat until softened, about 10-15 minutes. Drain and set aside.
  3. Combine the mashed sweet potatoes, cooked lentils, breadcrumbs, chopped onion, minced garlic, cumin, coriander, salt, and pepper in a large mixing bowl. Mix well.
  4. Form patties about 2–3 inches in diameter with your hands.
  5. Fry the patties in a non-stick frying pan with oil over medium heat for 4-5 minutes on each side until golden brown.
  6. Serve warm with a dipping sauce or zesty dressing.
