- 2 medium sweet potatoes
- 1 cup red lentils
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- Salt and pepper, to taste
- Oil for frying
Instructions
- Boil the sweet potatoes in a large pot of water until fork-tender, about 15–20 minutes. Drain and mash until smooth.
- Prepare the lentils by cooking them in a separate pot with water over medium heat until softened, about 10-15 minutes. Drain and set aside.
- Combine the mashed sweet potatoes, cooked lentils, breadcrumbs, chopped onion, minced garlic, cumin, coriander, salt, and pepper in a large mixing bowl. Mix well.
- Form patties about 2–3 inches in diameter with your hands.
- Fry the patties in a non-stick frying pan with oil over medium heat for 4-5 minutes on each side until golden brown.
- Serve warm with a dipping sauce or zesty dressing.
