Description

A delightful blend of roasted sweet potatoes, creamy brie, tart cranberries, and crunchy toasted walnuts, perfect for any gathering.


Ingredients

Scale
  • 2 large sweet potatoes
  • 8 ounces brie cheese
  • 1 cup cranberries (fresh or dried)
  • 1/2 cup walnuts, toasted
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/4-inch rounds and place them on a baking sheet lined with parchment paper.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Roast in the oven for about 25–30 minutes, tossing halfway through.
  5. Remove from the oven and top each round with a slice of brie cheese and a sprinkle of cranberries and toasted walnuts.
  6. Return to the oven for an additional 5–7 minutes to melt the cheese.
  7. Garnish with fresh parsley and serve warm.

Notes

These sweet potato rounds can be made ahead of time. Top with brie and garnishes just before serving.
