- 2 large sweet potatoes
- 8 ounces brie cheese
- 1 cup cranberries (fresh or dried)
- 1/2 cup walnuts, toasted
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4-inch rounds and place them on a baking sheet lined with parchment paper.
- Drizzle with olive oil and season with salt and pepper.
- Roast in the oven for about 25–30 minutes, tossing halfway through.
- Remove from the oven and top each round with a slice of brie cheese and a sprinkle of cranberries and toasted walnuts.
- Return to the oven for an additional 5–7 minutes to melt the cheese.
- Garnish with fresh parsley and serve warm.
Notes
These sweet potato rounds can be made ahead of time. Top with brie and garnishes just before serving.
