Ingredients
The following ingredients make a flavorful beef roast with rich onion-mushroom gravy.
- 3–4 lb beef chuck roast: The main ingredient and the best choice for a tender, slow-cooked result.
- 1 packet dry onion soup mix, 1 oz: Provides concentrated onion flavor and savory seasoning.
- 1 can condensed cream of mushroom soup, 10.5 oz: Creates a creamy base for the gravy.
- 1 cup beef broth: Adds moisture and helps form the cooking liquid.
Each ingredient serves a specific purpose, so there is no need to complicate the recipe with additional seasonings.
For the best results, choose a chuck roast with visible marbling throughout the meat. A little fat helps the roast develop a moist texture during slow cooking.
Instructions
Preparing this recipe takes only a few minutes. Follow these simple steps for tender beef and flavorful gravy.
Step 1: Prepare the Beef
Place the beef chuck roast in the bottom of your slow cooker.
Position it comfortably inside the cooking vessel so that the lid can close securely. If the roast has a particularly thick layer of external fat, you can trim some of it, but avoid removing all the visible marbling.
Patting the surface dry before placing the meat in the cooker is helpful if the roast is especially wet. Browning the beef in a skillet is another option when you want a deeper roasted flavor, although it is not necessary for this easy dump-and-go method.
Step 2: Add the Onion Soup Mix
Open the packet of dry onion soup mix and sprinkle the seasoning evenly over the top of the beef.
Try to distribute the mixture across as much of the surface as possible. The seasoning will gradually dissolve into the cooking liquid, helping flavor both the meat and the gravy.
Because packaged onion soup mix already contains salt and other seasonings, additional salt is usually unnecessary at the beginning.
Step 3: Add the Cream of Mushroom Soup
Open the can of condensed cream of mushroom soup and spoon it over the roast.
Spread the thick soup across the upper surface of the beef as evenly as you can. It does not have to cover every inch of the meat because the sauce will gradually combine with the other ingredients as the roast cooks.
The condensed soup gives the gravy a creamy consistency and helps it cling to the tender beef.
Step 4: Pour in the Beef Broth
Measure one cup of beef broth and pour it around the sides of the roast and into the bottom of the slow cooker.
Pouring around the meat helps preserve the layer of seasoning and condensed soup on top. The broth supplies moisture for the long cooking process and combines with the beef juices to form the gravy.
The roast does not need to be completely submerged. Slow cookers retain moisture well when the lid stays closed, and the meat will release additional juices as it cooks.
Step 5: Cover and Cook Low and Slow
Place the lid securely on the slow cooker and cook until the beef is very tender.
As a general starting point, a 3–4 lb chuck roast may take approximately 8–10 hours on LOW or 4–6 hours on HIGH, depending on the slow cooker, the thickness of the roast, and the temperature of the meat when cooking begins.
