- 1 3/4 cup powdered sugar
- 3 large egg whites

- Yellow food coloring
- 1/2 cup unsalted butter (room temperature)
- 1 cup powdered sugar (for filling)
- 1/4 cup lemon curd
Instructions
- Preheat your oven to 300°F (150°C), then line your baking sheets with parchment paper.
- Sift together the almond flour and powdered sugar in a mixing bowl.
- Whip the egg whites until frothy, gradually adding the granulated sugar until you reach stiff peaks.
- Fold in the sifted almond flour mixture and lemon extract, adding food coloring if desired.
- Pipe small circles onto the prepared baking sheets using a piping bag.
- Allow the macarons to sit for 30 minutes to form a skin.
- Bake for 15-20 minutes until firm; they should not stick to your fingers.
- Cool the macarons completely on the sheets before removing.
- Beat together butter, powdered sugar, and lemon curd for the filling.
- Pipe the filling onto half of the macaron shells and sandwich them together.
