- 1 cup coconut milk
- 1 tablespoon red curry paste
- 1 tablespoon lime juice
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- Fresh cilantro for garnish
- Salt and pepper to taste
- Optional: chopped chilies for extra spice
Instructions
- Whisk together coconut milk, red curry paste, lime juice, fish sauce, and sugar until well blended.
- Season the grouper fillets generously with salt and pepper.
- Heat a non-stick skillet over medium heat. Add the coconut mixture and warm through.
- Carefully place the seasoned grouper in the skillet, cover with a lid, and cook for approximately 3–4 minutes on each side.
- Remove from heat, garnish with fresh cilantro and optional chilies, and serve immediately.
Notes
For the most succulent grouper, avoid overcooking. You can prepare the coconut curry sauce in advance and store it in the fridge for up to three days.
