Instructions
- Mix the Greek yogurt with the minced garlic, salt, and pepper in a bowl. Spread it on a serving plate.
- Bring a small pot of water to a gentle simmer. Poach the eggs for 3–4 minutes until the whites are set.
- Meanwhile, melt the butter in a non-stick skillet over medium heat. Add paprika or red pepper flakes and sauté until fragrant.
- Remove the poached eggs with a slotted spoon and place them on the yogurt mixture.
- Drizzle the spiced butter generously over the eggs and finish with fresh herbs for garnish.
Notes
Serve with crusty bread or warm pita for a complete dish. You can prepare the yogurt mixture ahead of time.
