- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 2 tablespoons unsalted butter

- Crushed red pepper flakes (optional)
- Fresh basil for garnish (optional)
Instructions
- Melt the butter in a large skillet over medium heat.
- Sauté the minced garlic for about one minute until fragrant.
- Combine the drained beans and chopped sun-dried tomatoes, stirring well.
- Season generously with salt, pepper, and optional crushed red pepper flakes.
- Heat through for 5-7 minutes, stirring occasionally.
- Add the fresh spinach and cook until wilted, about 2-3 minutes.
- Garnish with fresh basil if desired and serve warm.
Notes
