- 1 cup cherry tomatoes, halved

Add the olive oil, red wine vinegar, garlic, dried oregano, Italian seasoning, red pepper flakes, salt, black pepper, and parsley to a bowl or jar.
Whisk or shake the mixture until the marinade is well combined and slightly emulsified.
In a large bowl, combine the cherry tomatoes, artichokes, mozzarella pearls, green and black olives, pepperoncini, roasted red peppers, cucumber, salami, pepperoni, and red onion.
Pour the garlic-herb marinade over the antipasto mixture and gently toss until everything is evenly coated.
Divide the mixture among clean glass jars, layering the ingredients evenly for both flavor distribution and a beautiful visual presentation.
Pour any remaining marinade into the jars, distributing it evenly among them.
