Instructions

  1. Whisk together the flour, sugar, baking powder, and salt in a large bowl until fully combined.
  2. Beat the eggs in another bowl, then add milk and vanilla extract, whisking until smooth.
  3. Gradually incorporate the wet mixture into the dry ingredients, stirring just until combined.
  4. Heat oil in a deep fryer or large pot over medium heat until it reaches 375°F (190°C).
  5. Carefully drop spoonfuls of batter into the hot oil, frying until golden brown, approximately 2-3 minutes per side.
  6. Use a slotted spoon to remove the beignets and place them on paper towels to drain excess oil.
  7. Dust generously with powdered sugar or drizzle with rich chocolate sauce just before serving.
