Description

Refreshing and vibrant popsicles made from hydrating watermelon and tart kiwi, perfect for hot summer days.


Ingredients

Scale
  • 2 cups diced watermelon
  • 1 cup diced kiwi
  • 12 tablespoons honey or agave syrup (optional)
  • 1 tablespoon lime juice

Instructions

  1. Prepare the fruit: Start by washing and cutting your watermelon into chunks, discarding the rind. Peel your kiwi and chop it into small pieces.
  2. Blend the watermelon: In a blender, combine the diced watermelon, honey (if using), and lime juice. Blend until smooth.
  3. Fill the molds: Pour the watermelon mixture into your popsicle molds, filling them about halfway.
  4. Add the kiwi: Gently press the diced kiwi into the molds, letting them sink slightly into the watermelon mix.
  5. Top off the molds: Pour the remaining watermelon mixture over the kiwi until the molds are filled to the top.
  6. Freeze: Insert the popsicle sticks and place the molds in the freezer for at least 240 minutes or until solid.
  7. Release the popsicles: When ready to enjoy, run warm water over the outside of the molds for a few seconds, then gently pull out the popsicles.

Notes

Store leftovers in an airtight container in the freezer for up to 2 months. Ensure you avoid stacking to prevent breaking.
