Instructions
- Combine cream cheese, powdered sugar, vanilla extract, and mashed raspberries in a mixing bowl until smooth.
- Stir in crushed graham crackers until well combined.
- Chill the mixture in the refrigerator for about 30 minutes.
- Use a cookie scoop to portion out the mixture and roll into balls.
- Melt the remaining white chocolate in a double boiler or microwave.
- Dip each cheesecake ball into the melted white chocolate and place on a parchment-lined baking sheet.
