Description

Delicious cheesy beef enchiladas that are sure to satisfy your cravings with their rich flavors and gooey cheese.


Ingredients

  • 1 lb ground beef
  • 1 cup onion, chopped
  • 2 cups enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is soft.
  3. Add the black beans, corn, cumin, garlic powder, salt, and pepper to the skillet. Stir to combine and cook for another 2-3 minutes.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and a sprinkle of cheese, then roll them up and place them seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top of the rolled tortillas.
  7. Sprinkle the remaining cheese on top.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Let cool for a few minutes before serving.

Notes

  • For a spicier version, add jalapeños to the beef mixture.
  • These enchiladas can be made ahead of time and stored in the refrigerator before baking.
  • Top with sour cream or guacamole for extra flavor.
