Follow these steps for a vibrant, flavorful sauce every time.

Step 1: Chop the Herbs and Garlic

Finely chop the fresh parsley, cilantro, and garlic. Use a sharp knife and chop until the herbs are small and fluffy but not mushy, similar to confetti. Transfer everything to a medium bowl. Make sure the herbs are completely dry before chopping, and use a very sharp knife so you slice rather than bruise the leaves.

Step 2: Add the Seasonings and Acid

Add the red wine vinegar, fresh lemon juice, dried oregano, red pepper flakes, salt, and black pepper to the bowl. Stir briefly to combine. Adding the vinegar and seasonings first lets the salt dissolve and the garlic mellow slightly before the oil goes in.

Step 3: Add the Olive Oil
